Green Tea Chicken Rice Soup

This soup is supposed to help with mental focus and eases anxiety.

Bring 5 cups water to boil and turn off heat.
Steep 3 Green Tea bags and one slices lemon grass stalk for 10 minutes.
Remove tea bags and lemon grass solids from broth.
Bring broth to a simmer again and add salt to taste (2+ tsp) and pepper.
Add 1 cup frozen shelled Edamame and 1 Cup slices Shiitake mushrooms.
Cook 5 minutes.
Add 1 Cup shredded chicken, 1 cup cooked brown rice, 1 Tbsp sesame oil, 2 sliced green onions.
Cook 2 minutes.
Serve garnished with coarsely chopped fresh cilantro.

I have substituted the chicken for vegetarian Fry Chick and I always add a few shakes of soy sauce to broth but not enough to darken broth much.
